Helen Ellis' Lemon Cake!
- 1 pkg. cake mix yellow/white
- 1 pkg. lemon instant pudding
- 4 eggs
- 1 cup warm water
- 1/2 cup cooking oil (NOT peanut oil)
Mix well in the order given. Bake in 2 long pans for approximately 1 hour at 350 degrees. When baked and still hot, pierce holes in cake with fork. Brush on the icing mixture. Cool in pans before removing.
Icing - 4 tbsp lemon juice and 1/2 cup white sugar
An Awesome Variation: use pistachio pudding mix; substitute 1 cup club soda for the water; Add 1/2 cup chopped nuts. Bake in a tube pan for 50 to 55 minutes at 350 degrees. Cool in pan for 25 minutes. Sprinkle with sugar while still warm. |
